Evil Dead 1 was great, but part two just has more sheer entertainment value, for me. And, if you make the following edits, the series would play as one long movie:
The first 15-20 minutes of Evil Dead 2, begin the movie right at the point where Ash is being flung through the trees, and it fits nicely to the end of part one. After that, everything fits. The dead girlfriend could just as easily be the girl from the first movie. Edit out the final shot of part 2, which shows the knights cheering him on. Show him falling and being poked at by the knights, but then cut to the scene in the beginning of part three where he's being taken to the castle in chains. And there, it all fits. The reason those scenes were in the originals in the first place was that each company making the movies didn't think most of the audience had seen the originals.
